Between the months of December and March, when the calçot is in season, we enjoy the Calçotada!

Calçot is a type of scallion or green onion known as calçot in the Catalan language. The calçot from Valls (Tarragona, Catalonia) is a registered EU Protected Geographical.

A calçotada is a winter barbecue where the calçots are on a grill, charred and then dipped in the rich and famous Romesco Sauce; many believe romesco hailed from a recipe that dates back to the Roman stronghold of Tarraco (modern-day Tarragona), making it one of Europe’s oldest sauces. There are as many romesco recipes as there are chefs in Catalunya!

After piles some calçots come the grilled meats, which pair perfectly with romesco sauce as well =)
