I want to share a really good cake recipe suitable for everyone,  the recipe is without eggs, so it is vegan.

You can make it for a birthday or any celebration because it is really easy to bake and it is delicious.

Following the steps below, you will be able to prepare something sweet at home in less than one hour, as soon as you want to see how is growing the cake, it will be ready, and you can enjoy it with your friends or with your new family in case you are in homestay.

If you also are a chocolate lover, you can cover the cake with some chocolate or you can also add whatever you want in it, as some raspberry jam and decorate it with some details as you taste.

 Spongy Cake

 

YIELD:   serves 8

ACTIVE TIME:   15 minutes

TOTAL TIME: 1 hour

Ingredients:

  • 3 3/4 cups (about 18 3/4 ounces) all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 cup (about 7 ounces) sugar
  • 3/4 cup olive oil
  • 3/4 cup freshly squeezed orange juice from about 3 large oranges
  • 1 teaspoon vanilla extract
  • Confectioners sugar

 

Special Equipment: 9 inch/ 23centimeters springform pan (regular or bundt)

 

Directions:

  • Adjust oven rack to middle position and preheat oven to 350°F/180°C. Grease pan with olive oil and dust with flour, knocking out any excess.
  • In a large bowl, whisk together flour, baking powder, cinnamon, salt, and sugar. Add olive oil, orange juice, and vanilla and stir to combine. Batter will be very thick. Scrape batter into prepared pan and bake until golden and a tester inserted into the middle of the cake comes out clean, about 45 minutes. Let cool 10 minutes then release springform and continue to cool on a wire rack. Dust with confectioners sugar before serving.
