Sea Food Paella

Once you are in Spain, you see heaps of places, bars, and restaurants offering Paella. Paella is one of the symbols of our country, but it is originally from Valencia, specifically from Albufera, on the east coast of Spain.

Would you like to be able to surprise your friends cooking one of it?

Let’s see how to prepare a delicious one, in no more than 1 hour.

Seafood paella

First of all, we need to prepare a fish stock with tomato, onion, virgin olive oil, rockfish, and crabs.

We chopped the onion and we put it in a stewpot with olive oil and we cook it until it looks as transparent, then we add water (almost until the top) and we add all the rockfish and crabs. We leave it to boil and wait at around 15-20 minutes. Then the stock will be ready.

The second step will be put a generous olive oil jail to the Paella pan with garlic and onion chopped, a few minutes later we stir fry scampi, the prawns or langoustines and remove all from the pan.

Then it is time to add the sepia or squid cut in small dice, add the ñora* sauce and continue stir-frying all the ingredients until they get well mixed.

Once they are all mixed, we add the sweet paprika powder and mix trying it do not get burnt. Then we add the rice (100g per person) and keep moving it until the rice gets slightly browned. At this point, it is time to pour the fish stock already prepared. The proportion of the fish stock we should add is 1:3 (rice-stock).

Turn the heat up to the maximum and when the stock starts to evaporate, place the mussels and the rest of seafood on the top.

Once you start to see how the rice is coming up to the surface, reduce heat nearly minimum and wait to all the stock to evaporate.

You will have to control if the rice needs more stock or not, depending on if it is enough cooked or not.

Make sure the stock is hot when you add it to the rice to avoid lowering the temperature.

Once the rice is dry, we let it rest for 10 minutes.

“Et voilà!” Ready to enjoy it!

 

*How to prepare ñora (It is the master trick to prepare a delightful Seafood paella, it enhance the flavor of the rest of the ingredients) For its preparation we need:

  • 4 small dried sweet red peppers (Ñoras)
  • 2 cloves of dried garlic
  • 4 ripe tomatoes (pear type)

First of all, we clean the ñoras, taking off all the pips. Previously we have hydrated them in water for two hours. Peel the garlic and chop the tomatoes, and then we crush all of them (garlic, tomatoes, and ñora) until to obtain dough as a puree.
